Maple Walnut Cookies


 

As Fall approaches and our young ones are headed back to school in non-traditional form, a healthy AND tasty snack is necessary to alleviate the trying times that are ahead of us. This month, we would like to share this easy-to-make cookie recipe - fun for you and for the kids. These cookies are Paleo diet-friendly, gluten-free, refined sugar-free and vegan. They contain better ingredients for your teeth than mainstream desserts, without compromising any taste bud satisfaction. These cookies are a great treat for your kids to take to school and enjoy at home with you.

Ingredients:

  • 1/2 cup creamy almond butter
  • 1/3 cup maple syrup
  • 1/2 cup coconut flour
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions:(Makes 11 maple walnut cookies)

  1. Preheat the oven to 375 degrees Fahrenheit
  2. Add the almond butter, maple syrup, vanilla extract, and salt, then mix well
  3. Add the coconut flour and mix well
  4. Stir in the chopped walnuts
  5. Scoop out a heaping teaspoon of dough into your hands, then roll it into a ball shape and place it on a parchment paper-lined baking tray
  6. Use your fingers to flatten the dough ball into a round cookie shape
  7. Repeat with the rest of the dough
  8. Bake in a preheated 375 degree Fahrenheit oven for 10 minutes.
Let cool before serving.
